Also, piping! material sewn in a tube (hence “pipe”) and then sewn again onto the outlines of an item of clothing (think sailor’s uniforms, etc.). Although now that I look at those lovely shoes again, I can’t tell if the red is piping or trim (no tube, just contrast).
